A warming meal for a cold night.<\/p>\n<div id=\"attachment_823\" style=\"width: 570px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2013\/02\/2013-02-20-20.05.06.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-823\" class=\" wp-image-823 \" alt=\"Seitan stew with raisins and couscous\" src=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2013\/02\/2013-02-20-20.05.06-1024x768.jpg\" width=\"560\" height=\"420\" srcset=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2013\/02\/2013-02-20-20.05.06-1024x768.jpg 1024w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2013\/02\/2013-02-20-20.05.06-300x225.jpg 300w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2013\/02\/2013-02-20-20.05.06-200x150.jpg 200w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><p id=\"caption-attachment-823\" class=\"wp-caption-text\">Seitan stew with raisins and couscous<\/p><\/div>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 tsp olive oil<\/li>\n<li>1 small onion, chopped<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 carrots, peeled and in cut half moons<\/li>\n<li>1\/2 courgette, in 1cm cubes<\/li>\n<li>200 gr seitan, in bitesized pieces<\/li>\n<li>3\/4 tsp <em>ras el hanout<\/em><\/li>\n<li>1 small tin tomato concentrate (70 gr)<\/li>\n<li>30 gr raisins<\/li>\n<li>120 gr (dry weight) couscous<\/li>\n<li>salt &amp; pepper<\/li>\n<li>1 tbsp dry parsley (or 2 tbsp chopped fresh parsley)<\/li>\n<li>1\/2 tsp garlic powder<\/li>\n<\/ul>\n<p><span style=\"font-size: medium;\"><span style=\"line-height: 24px;\"><strong>Instructions:<\/strong><br \/>\n<\/span><\/span><\/p>\n<p><em>For the stew:<\/em><\/p>\n<ol>\n<li style=\"text-align: justify;\">Put the raisins in a heat resistant bowl, and cover with boiling water.<\/li>\n<li style=\"text-align: justify;\"><span style=\"line-height: 16px;\">In a broad pan, heat up the oil. Add the onion and garlic and cook on medium heat until golden. Add the carrot, and cook until it turns golden, several minutes. Add the courgette and cook for a few minutes. Add seitan and cook for another couple of minutes, stirring.<\/span><\/li>\n<li style=\"text-align: justify;\">Add the ras el hanout, and season with salt and pepper. Stir and let the spices cook for about 30 seconds, to release the flavor.<\/li>\n<li style=\"text-align: justify;\">Add the tomato paste and about 2-3 tbsp of water to dissolve it. Stir well. Add the raisins and their soaking water. Bring stew to a simmer and let cook for 10 minutes.<\/li>\n<li style=\"text-align: justify;\">Taste and adjust seasoning if needed.<\/li>\n<\/ol>\n<p><em><span style=\"font-size: medium;\"><span style=\"line-height: 24px;\">For the couscous:<\/span><\/span><\/em><\/p>\n<ol>\n<li style=\"text-align: justify;\"><span style=\"line-height: 16px;\">Place couscous in a heat resistant bowl. Add pinch of salt, pinch of black pepper, garlic powder and dry parsley. (If using fresh parsley, add once the couscous is cooked).<\/span><\/li>\n<li style=\"text-align: justify;\">Bring water to a boil. Measure 150 ml (the same volume as the couscous), and pour over the couscous. Let couscous soak the water for several minutes.<\/li>\n<li style=\"text-align: justify;\">Once all water has been absorbed, fluff couscous with a fork before serving warm with the stew.<\/li>\n<\/ol>\n<p style=\"text-align: justify;\"><span style=\"font-size: medium;\"><span style=\"line-height: 24px;\"><strong>Servings:<\/strong> 2 servings<br \/>\n<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><strong>Nutritional information:<\/strong><\/p>\n<p style=\"text-align: justify; padding-left: 30px;\"><em>Calories:<\/em> 537<br \/>\n<em>Protein:<\/em> 40 gr<br \/>\n<em>Fat:<\/em> 7 gr<br \/>\n<em>Carbs:<\/em> 81 gr<\/p>\n<p style=\"text-align: justify;\"><em>Ras El Hanout is a spice blend used in Morocco and other North African countries. There is no definitive recipe for it, but commonly it will contain cardamom, clove, cinnamon, ground chilli peppers, coriander, cumin, nutmeg, peppercorn and turmeric.
