{"id":169,"date":"2008-06-29T16:49:53","date_gmt":"2008-06-29T14:49:53","guid":{"rendered":"http:\/\/sade.sadevil.org\/blog\/?p=169"},"modified":"2008-06-30T20:54:51","modified_gmt":"2008-06-30T18:54:51","slug":"truffle-bonbon","status":"publish","type":"post","link":"https:\/\/sade.sadevil.org\/blog\/2008\/06\/29\/truffle-bonbon\/","title":{"rendered":"Truffle-bonbon"},"content":{"rendered":"<p>That is how a friend named the truffles I made for her.<\/p>\n<div align=\"center\"><a href=\"http:\/\/www.sadevil.org\/gallery\/Foodsies\/p6292322\" target=\"_blank\"><img decoding=\"async\" src=\"http:\/\/www.sadevil.org\/gallery\/albums\/Foodsies\/p6292322.sized.jpg\" alt=\"Truffle-bonbon\" width=\"60%\"\/><\/a><\/p>\n<p><strong>Truffle-Bonbon<\/strong><\/div>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>240 grams milk chocolate<\/li>\n<li>150ml cr\u00e8me fra\u00eeche or sour cream<\/li>\n<li>1\/2 teaspoon fresh ground pepper<\/li>\n<li>1\/4 teaspoon ground nutmeg<\/li>\n<li>4-6 cloves<\/li>\n<li>pinch salt<\/li>\n<li>1 tablespoon butter<\/li>\n<li>1\/4-1\/2 cup bitter cocoa powder<\/li>\n<\/ul>\n<p><strong><em>Make them:<\/em><\/strong><\/p>\n<ol>\n<li>In a small saucepan, melt the cr\u00e8me fra\u00eeche. When it&#8217;s warm, add the spices and let rest for half an hour (also known as <em>infuse<\/em>). Remove the cloves, add salt, and reheat.<\/li>\n<li>Chop the chocolate in small pieces and add to the warm cr\u00e8me, removing with a wooden spoon until it&#8217;s completely molten and shiny. Do this over a very low heat, and removing the saucepan often from the heat source. Add the butter and incorporate it completely. You now have a tasty ganache.<\/li>\n<li>Line a 15&#215;20 dish with baking paper so that the paper overhangs on the shorter sides. Pour the ganache in and smooth the top with a rubber spatula. Lick clean your wooden spoon and rubber spatula once you&#8217;re done. Stick the dish in the fridge overnight.<\/li>\n<li>When the ganache is completely cool and solid, remove it from the dish and put it on a cutting board, using the baking paper to move the ganache and as a base for cutting. Put cocoa in a deep dish. With a knife, cut squares of ganache, transfer them to the cocoa, and roll them around so they are completely covered in cocoa. Trasnfer to small baking paper cups for a nice touch.
