Since we were going to be sharing with friends, one of them needs to eat gluten &amp; lactose free, I went and adapted the original recipe. And here is my version.<\/p>\n<p><a href=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1176\" src=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-1024x768.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-1024x768.jpg 1024w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-300x225.jpg 300w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-768x576.jpg 768w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-200x150.jpg 200w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/08\/IMG_20170805_195220-150x113.jpg 150w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>125 grams (refined) coconut oil<sup class='footnote'><a href='#fn-1175-1' id='fnref-1175-1' onclick='return fdfootnote_show(1175)'>1<\/a><\/sup><\/li>\n<li>125 gr (cane) sugar <sup class='footnote'><a href='#fn-1175-2' id='fnref-1175-2' onclick='return fdfootnote_show(1175)'>2<\/a><\/sup><\/li>\n<li>3 eggs <sup class='footnote'><a href='#fn-1175-3' id='fnref-1175-3' onclick='return fdfootnote_show(1175)'>3<\/a><\/sup><\/li>\n<li>1 tsp vanilla essence<\/li>\n<li>50 grams ground almonds <sup class='footnote'><a href='#fn-1175-4' id='fnref-1175-4' onclick='return fdfootnote_show(1175)'>4<\/a><\/sup><\/li>\n<li>50 grams oat flour <sup class='footnote'><a href='#fn-1175-5' id='fnref-1175-5' onclick='return fdfootnote_show(1175)'>5<\/a><\/sup><\/li>\n<li>50 grams fine corn flour (not cornmeal, not cornstarch!)<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>3\/4 tsp baking powder<\/li>\n<li>2 apples<\/li>\n<li>150 grams blackberries<\/li>\n<li>2 tbsp cane sugar + 1 1\/2 tsp cinnamon for topping<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li>Preheat oven to 170\u00b0C \/ 150\u00b0C if using convection. Line the bottom of a 20-22 cm spring form with baking paper.<\/li>\n<li>Soften the coconut oil by either leaving it in a warm place or microwaving it at low power for 30-45 seconds. Add the sugar and mix until well combined and sugar starts to dissolve into the oil.<\/li>\n<li>Add the eggs, one at a time, to the oil-sugar mixture, and mix well. Add the vanilla essence and mix.<\/li>\n<li>Combine ground almonds, oat &amp; corn flour, salt &amp; baking powder in a bowl. Add to the oil-sugar-egg mixture slowly and mix until a smooth dough has formed.<\/li>\n<li>Peel and core the apples, slice them in 12-14 pieces each. Separate 8 slices for decoration, and cut the rest in smaller pieces.<\/li>\n<li>Add the apple pieces and most of the blackberries (leave 4 for decoration) and fold gently.<\/li>\n<li>Pour the batter onto prepared spring form and spread (more or less) evenly. Decorate with the reserved apple slices and blackberries.<\/li>\n<li>Mix sugar and cinnamon for topping and sprinkle on top of cake.<\/li>\n<li>Bake cake in preheated oven, middle rack, for 50-55 minutes. A cake tester inserted in the middle will come out clean (albeit greasy) when cake is ready.<\/li>\n<li>Loosen the edges of the cake with angled spatula \/ knife, let cool enough to remove cake from spring form and let cake cool on cooling rake.<\/li>\n<\/ol>\n<p><strong>Servings<\/strong><\/p>\n<p>8 servings<\/p>\n<p><strong>Notes<\/strong><\/p>\n<div class='footnotes' id='footnotes-1175'>\n<div class='footnotedivider'><\/div>\n<ol>\n<li id='fn-1175-1'> Refined coconut oil tastes and smells less than non-refined, thus making it ideal to bake with when you aren&#8217;t planning on a coconut tasting cake <span class='footnotereverse'><a href='#fnref-1175-1'>&#8617;<\/a><\/span><\/li>\n<li id='fn-1175-2'> I&#8217;m picky with sugar, I like raw \/ cane sugar, not white. Use whatever you prefer <span class='footnotereverse'><a href='#fnref-1175-2'>&#8617;<\/a><\/span><\/li>\n<li id='fn-1175-3'> Be kind to the hens, try to get eggs from free range \/ bio producers, but that&#8217;s just me <span class='footnotereverse'><a href='#fnref-1175-3'>&#8617;<\/a><\/span><\/li>\n<li id='fn-1175-4'> You can grind the almonds yourself. Use raw almonds. <span class='footnotereverse'><a href='#fnref-1175-4'>&#8617;<\/a><\/span><\/li>\n<li id='fn-1175-5'> You can make the oat flour yourself too.
