It had to be vegan (=egg &amp; lactose free), gluten free and nut free. And I just didn&#8217;t fancy repeating something I had already made.<\/p>\n<p>For some reason frangipane tart had lodged itself in my head, and so I decided to make one.<\/p>\n<div id=\"attachment_1167\" style=\"width: 810px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1167\" class=\"size-large wp-image-1167\" src=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-1024x768.jpg\" alt=\"Picture of a plum frangipane tart still in its mold, resting on a cooling tray, on a dark kitchen counter\" width=\"800\" height=\"600\" srcset=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-1024x768.jpg 1024w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-300x225.jpg 300w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-768x576.jpg 768w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-200x150.jpg 200w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/05\/IMG_20170521_135058-150x113.jpg 150w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><p id=\"caption-attachment-1167\" class=\"wp-caption-text\">Plum Frangipane Tart<\/p><\/div>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Press-in almond crust<\/em><\/p>\n<ul>\n<li>2\/3 cup almond meal (approx 65 grams)<\/li>\n<li>1 cup oat meal \/ ground oats (approx 90 grams)<\/li>\n<li>2 tbsp sugar (approx 30 grams)<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>6 tbsp refined coconut oil (approx 65 grams)<\/li>\n<li>4 tbsp cold oat milk (approx 60 ml)<\/li>\n<\/ul>\n<p><em>Frangipane filling<\/em><\/p>\n<ul>\n<li>125 gr almond meal<\/li>\n<li>125 gr oat flour<\/li>\n<li>150 gr powder (confectioner) sugar<\/li>\n<li>75 gr refined coconut oil, melted<\/li>\n<li>2 egg replacements (20 gr v-eggie + 140 ml oat milk)<\/li>\n<li>120 ml oat milk<\/li>\n<li>2 tsp vanilla essence<\/li>\n<\/ul>\n<p><em>To bake<\/em><\/p>\n<ul>\n<li>6-8 plums<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p><em>For the crust<\/em><\/p>\n<ol>\n<li>Preheat oven to 180\u00b0C.<\/li>\n<li>In a stand mixer (paddle attachment) or food processor, mix all ingredients until a ball forms.<\/li>\n<li>Press crust on the bottom and up the sides of a loose bottomed fluted tart mold (24cm diameter).<\/li>\n<li>Bake crust in preheated oven for 15 to 20 minutes, until it starts to dry out.<\/li>\n<li>Take out and let cool for a few minutes (while you make the filling).<\/li>\n<\/ol>\n<p><em>For the filling<\/em><\/p>\n<ol>\n<li>In a stand mixer (wire whisk), or by hand with a very stiff whisk \/ electric beaters, mix all ingredients for the frangipane until a smooth consistency is achieved.<\/li>\n<\/ol>\n<p><em>For the tart<\/em><\/p>\n<ol>\n<li>Scoop most (you might have leftover) filling and fill the pre-baked crust, leaving a bit of head space (about 5mm).<\/li>\n<li>Slice plums in half, remove pit, and slice each half in thirds or quarters (depending on size and own taste).<\/li>\n<li>Arrange plum slices on top of the frangipane.<\/li>\n<li>Bake tart for 45-60 minutes at\u00a0180\u00b0C, or until the frangipane starts to turn golden and a toothpick inserted in the middle comes out dry.<\/li>\n<li>Let cool in mold on cooling rack.<\/li>\n<\/ol>\n<p><strong>Notes<\/strong><\/p>\n<ul>\n<li>This recipe is heavily adapted from several vegan and non-vegan recipes.<\/li>\n<li>Feel free to use margarine instead of coconut oil.<\/li>\n<li>The amount of sugar in the filling can be changed to taste. Next time I might go for 125gr instead of 150gr, since it was more than sweet enough for us.<\/li>\n<li>What to do with the leftover filling: divide filling into ramekins or muffin tray, top with more sliced fruit, and bake for about 35 to 45 minutes.<\/li>\n<li>Try it with whichever fruit is seasonal and you like!<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Another invite for dinner at friends calls for another dessert to be baked.
