And I love it.<\/p>\n<p>Having friends over to visit with allergies and food intolerances, means I get to experiment with baking. Which I love even more.<\/p>\n<p>So after a week of searching the internet for a lemon blueberry cake that fitted the bill (vegan, gluten free, nut free, and preferably banana free), I found two recipes I could mix &amp; match and adapt to my taste. From those two recipes a third was born, and I bring it to you.<\/p>\n<div id=\"attachment_1154\" style=\"width: 810px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1154\" class=\"size-large wp-image-1154\" src=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-1024x768.jpg\" alt=\"Lemon blueberry cake\" width=\"800\" height=\"600\" srcset=\"https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-1024x768.jpg 1024w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-300x225.jpg 300w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-768x576.jpg 768w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-200x150.jpg 200w, https:\/\/sade.sadevil.org\/blog\/wp-content\/uploads\/2017\/04\/lemon-blueberry-cake-150x113.jpg 150w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><p id=\"caption-attachment-1154\" class=\"wp-caption-text\">Lemon Blueberry Cake<\/p><\/div>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Blueberry compote<\/em><\/p>\n<ul>\n<li>225 gr (frozen or fresh) blueberries (I used frozen, because available all year long at a reasonable price)<\/li>\n<li>30 gr (coconut) sugar<\/li>\n<li>30 ml water<\/li>\n<\/ul>\n<p><em>Lemon cake<\/em><\/p>\n<ul>\n<li>zest &amp; juice of two lemons<\/li>\n<li>120 ml soy milk (or any other plant based milk)<\/li>\n<li>2 egg replacers (I used v-eggie by P38, a local Belgian company, feel free to use any egg replacement available to you, or flax \/ chia egg)<\/li>\n<li>50 gr (coconut) sugar<\/li>\n<li>30 ml olive oil<\/li>\n<li>1 tsp vanilla essence<\/li>\n<li>90 gr fine polenta<\/li>\n<li>110 gr fine almond meal (almonds are <a href=\"http:\/\/www.todayifoundout.com\/index.php\/2010\/04\/almonds-are-not-nuts\/\">seeds<\/a>, not nuts)<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>1\/2 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p><em>Blueberry compote<\/em><\/p>\n<ol>\n<li>Put blueberries, sugar and water in a small saucepan. Bring to a boil, lower heat to simmer, and simmer, stirring from time to time, for 15 minutes.\u00a0The compote will have thickened and have a glossy look.<\/li>\n<li>Let cool while preparing the cake batter<\/li>\n<\/ol>\n<p><em>Lemon cake<\/em><\/p>\n<ol>\n<li>Line the bottom of a spring form with baking paper and set aside. Heat oven to 175\u00b0C.<\/li>\n<li>In a mixing bowl, add all wet ingredients (from lemon up to and including vanilla essence) and mix thoroughly so sugar dissolves.<\/li>\n<li>Add dry ingredients to mixing bowl, and whisk until no lumps remain.<\/li>\n<li>Pour 1\/2 to 1\/3 of the cake batter in a prepared form. Spoon half the compote on top of the cake batter. Top with the remaining cake batter, and then the remaining compote. Swirl with a knife \/ toothpick if wanted.<\/li>\n<li>Bake cake in pre-heated oven for 35 minutes, or until a toothpick inserted in the middle comes out clean.<\/li>\n<li>Let cool in tin for 15-20 minutes, then loosen rim, remove cake, and let cool on a cooling rack.<\/li>\n<\/ol>\n<p><em>Enjoy!<\/em><\/p>\n<hr \/>\n<p>As an aside, I realize I need to work on taking better pictures of my recipes. It&#8217;ll never be a step by step because who has time for that?!<\/p>\n<p>But I really want to remember to take a picture of the plated cake, not just the teaser picture of the cake cooling on a rack, before diving into it.
